Chicken Afritada

This is a common recipe in our country which I believe originated from Spain and was then localized in a sense that there came lots of variations in regards to this recipe. Anyway, what I will be cooking is what was handed down to me by of course my foster mother.

Ingredients

Ingredients:

  1. Half Kilo Chicken
  2. Two pieces Potato, quartered
  3. One piece carrots, sliced
  4. One Piece red pepper, sliced
  5. Three cloves of garlic, (minced or chopped)
  6. One piece sliced onion
  7. Tomato sauce
  8. Salt and pepper to taste
  9. Cooking oil of your choice
 Procedures:
  1. Heat the oil and saute the onions and garlic
  2. Add the chicken and semi fry until some part parts of the chicken turns golden brown.
  3. Add the tomato sauce with one cup of water.
  4. Allow to boil then add the potato and carrots
  5. Simmer until the potato and carrots are cooked
  6. Add the Red Pepper
  7. Cook for about 3 minutes
  8. Serve hot with rice.
